Tofu Skewers with Spicy Peanut Butter Sauce | Vegan & GF

These vegan Tofu Skewers with Grilled Veggies are the bbq recipe you need for a delicious vegan bbq party or to enjoy them at home. They are Gluten-Free and protein-packed (thanks tofu!). Served with Spicy Peanut Butter sauce, creamy, salty, and flavorful.

Ingredients for these Tofu Skewers with Grilled Veggies:

  • Fresh Vegetables: Zucchini, mushrooms, red and yellow bell pepper, and carrots. You can use whatever seasonal vegetable you like but remember: cut the pieces in the same size so they cook evenly.
  • Plant-based protein: Firm tofu and creamy peanut butter (not chunky).
  • Easy-find condiments: Soy sauce (or Tamari sauce), rice vinegar, cornstarch, olive oil…

How to make these Vegan Tofu Skewers:

  1. Cut your pressed tofu into 2,5 cm (1 inch) by 2,5 cm (1 inch) cubes.
  2. Mix the tofu marinade ingredients in a medium container and whisk.
  3. Add the tofu and shake the container. Set aside for 20-30 minutes. Dip the wood skewers in warm water (so that they do not burn in the oven).
  4. Preheat the oven to 200ºC. Wash and cut the vegetables into squares of the same size (2,5 cm or 1 inch) so the cooking is homogeneous.
  5. In a medium pan or grill pan over medium-high heat, add the olive oil and the marinated tofu (without the marinade). Let it cook for 5 minutes until the outside of the tofu is slightly crispy.
  6. While cooking, add the veggies into the container with the leftover marinade and shake it.
  7. Skewer the tofu and veggies leaving a little space between each piece. Place the skewers in the oven rack and put a tray underneath (the mushrooms will pour water).
  8. Let them bake for 20 minutes*. Meanwhile, prepare the sauce by mixing all the ingredients. Let it rest in the fridge.
  9. When the vegetables are cooked, remove them from the oven and serve with homemade Naan Bread and the sauce, sprinkle some fresh parsley and sesame seeds.

*If you want to grill the skewers, skip this part. Grill them in the barbecue until the vegetables are cooked.

Ingredients

Tofu and Veggies

  • 1 package of Firm Tofu, pressed with the water removed
  • 8 wood skewers, soaked in warm water for 20 minutes, or metal ones
  • 1 Tbsp EVOO (Extra Virgin Olive Oil)
  • 1 cup mushrooms
  • 1 zucchini
  • 1/2 red bell pepper
  • 1/2 yellow bell pepper
  • 2 carrots

Tofu Marinade

  • 2 Tbsp Soy Sauce
  • 1 tsp Rice Vinegar
  • 2 tsp Sriracha (optional)
  • 1 tsp Cornstarch
  • ½ tsp garlic powder

Spicy Peanut Sauce

  • 2 Tbsp Peanut Butter
  • 1 Tbsp Soy Sauce
  • ½ Lemon, juiced
  • 1 tsp sweetener of choice
  • 1 tsp Sriracha (optional)
  • ½ tsp Rice Vinegar

Instructions
