Naturally Sweetened Apple Cake | Vegan

This Simple and Delicious but also NATURALLY SWEETENED Apple and Lemony Cake will remind you of childhood. It is very fluffy and moist and perfectly sweet.

Naturally Sweetened Apple Cake | Vegan

Simple and Delicious but also NATURALLY SWEETENED Apple and Lemony Cake

Ingredients

Wet ingredients

  • 1 1/4 cup unsweetened soy milk (300ml) 
  • 2 medium apples (200g)
  • 80g Extra Virgin Olive Oil
  • 1/2 cup Date Paste
  • 1tbsp ground flax seeds
  • Zest of 1 lemon
  • 1/4 tsp apple cider vinegar

Dry ingredients

  • 250g whole spelt flour
  • 50g cornstarch
  • 1/2 cup ground almond (50g) 
  • 1 tsp cinnamon
  • 1 tsp of baking powder
  • 1/2 tsp baking soda
  • Pinch of salt

Instructions

  1. Preheat the oven to 200ºC.
  2. Cook apples in the oven at 180ºC until soft or peel and cut the apples and cook them in the microwave for about 5 minutes until soft.
  3. Blend wet ingredients: cooked apples, oil, Date Paste (or 100g of dates), vinegar, milk, lemon zest and flax seeds.
  4. Mix dry ingredients.
  5. Mix all the ingredients.
  6. Transfer the batter to a greased baking loaf pan. Then, add a sliced apple to the top of the mixture to decorate the cake.
  7. Bake it for 45 minutes at 180°C.
