Protein Okara Crackers | Vegan Soy Pulp

Let’s make these crispy and light Protein Crackers made from Okara (also called soy pulp). They are flavored with fresh rosemary and thyme. These crackers are simple to make but healthy, full of protein and fiber.

Wholesome Ingredients for these Vegan Protein Okara Crackers:

  • Okara or Soy Pulp (from making homemade soy milk)
  • Whole Wheat Flour
  • Extra Virgin Olive Oil
  • Rosemary
  • Fresh Thyme
  • Sea salt & Pepper

How to make these Vegan Protein Crackers:

  1. Preheat oven to 200ºC (400 F).
  2. Mix together all ingredients in a bowl. Knead the dough to form a firm mixture, trying not to over mix as the dough will become tough.
  3. Place the dough between two sheets of parchment paper. Using a rolling pin, roll out as thin as possible. TIP: The thinner the dough, the crispier crackers will be.
  4. Remove the top layer of parchment paper and cut the dough as desired into strips or triangles with a knife. Place the crackers on a baking sheet, sprinkle some flaky salt and place them in the oven.
  5. Bake for 15-20 minutes or until the crackers are crispy and lightly browned.

This recipe is the best to reuse the remaining soy pulp from making homemade soy milk or other plant milk you make.

  • 1 1/2 cup okara (soy pulp) (185 g)
  • 1 1/2 cup whole wheat flour (180 g)
  • 2 Tbsp Extra Virgin Olive Oil (20 g)
  • 1 Tbsp fresh Rosemary
  • 1 Tbsp fresh Thyme
  • 1 tsp salt (5 g)
  • 1/4 tsp pepper
