Browffins | Vegan

These Browffins are my two favourite chocolate recipes combined into one: Muffins and Brownie. These HEALTHY browffins are super tender and moist. They are Naturally Sweetened: Apples and Date Paste. So EASY to make and insanely delicious. They are also perfect for a quick breakfast or snack and perfect for Kids. The recipe is sweetened with no added sugars (aka Naturally Sweetened as always in this blog!). In these Browffins specifically with apples and our Healthy Sweetener – Date Paste and made with only whole ingredients. Do you want more Muffin Recipes? These Healthy Browffins are the combination of the best desserts: Muffins and Brownie. They are tender and moist.

Ingredients

Wet ingredients

  • 1 medium apple (180g)
  • 1 cup dates
  • 1 cup vegetable milk (250ml)
  • 3 flax eggs (1 flax egg = 1 tbsp ground flax seeds (7g)+ 3 tbsp water)
  • 1/2 cup EVOO (Extra Virgin Olive Oil) (85g)

Dry ingredients

  • 1 1/2 cup whole wheat flour (200g)
  • 1/2 cup cacao powder (45g)
  • 1/2 tbsp cinnamon
  • 1 tbsp baking powder (16g)
  • 1/4 tsp baking soda
  • Pinch of salt
  • 1/3 cup chopped walnuts (30g) and more for toppings

Instructions

  1. Preheat the oven to 180ÂșC.
  2. Cook apple: Cook peeled and diced apple with the dates until they are soft (5 mins).
  3. Mix wet ingredients: Cooked apple and dates, milk (we use soy), oil and flax eggs. You can also blend them until smooth.
  4. Mix dry ingredients: Mix all dry ingredients in a large bowl.
  5. Mix wet and dry ingredients and add chopped walnuts.
  6. Transfer the batter to a greased muffin pan and top them with more chopped walnuts.
  7. Bake it 180°C for 25 minutes until the wood stick comes out almost dry.
  8. Let cool before removing the muffins from the pan.
