Wholesome Pretzel Knots | Vegan & Whole wheat flour

Wholesome Ingredients for these Vegan Pretzel Knots:

  • Whole Wheat Flour and 00 Wheat Flour (or Plain Flour)
  • Unsweetened plant milk
  • Warm water
  • Active Dry Yeast
  • Sugar (to activate the yeast)
  • Extra Virgin Olive Oil
  • Baking Powder
  • Sea salt

How to make these Vegan Wholesome Pretzels:

  1. Make Pretzel Dough: mix together warm water, milk, sugar, and dry yeast. Let sit for 10 minutes.
  2. Add the flours, olive oil and mix together.
  3. Knead the dough until smooth and incorporate the salt. Knead and form a round shape.
  4. Place into an oiled bowl, cover with a towel, and set in a warm place for 1 hour.
  5. Preheat oven to 210 Celsius.
  6. Divide the dough into 1/4 cup balls and make the Knot shape (see the photos). Place the knots on a baking sheet.
  7. In a pot boil the water with the baking soda. Place each knot for 25 seconds.
  8. Brush each Pretzel with plant milk and flaky sea salt.
  9. Bake them for 20 minutes until crispy brown. Enjoy them warm!

Ingredients

Pretzel Dough:

  • 1 1/4 cup warm water (265 g)
  • 1/2 cup unsweetened plantbased milk (105 g)
  • 2 tsp active dry yeast (9 g)
  • 1 tsp sugar (5 g)
  • 2 1/2 cup whole wheat flour (290 g)
  • 2 cup white wheat flour “00” (280 g)
  • 4 Tbsp extra virgin olive oil (40 g)
  • 1 1/2 tsp sea salt (7 g)

For boiling:

  • 8 cups boiling water
  • 1/2 cup baking soda (110 g)

For topping:

  • Unsweetened plant milk
  • Flaky Sea salt
  • Sesame seeds
  • Poppy seeds
  • Coconut flakes
  • Vegan cheese
