Almond Butter Easy Cookies | Vegan & Naturally Sweetened

These Vegan Almond Butter Cookies sweetened with dates are easy to make, made with just 5 wholesome ingredients. This recipe is the perfect chewy and tender on the inside cookie recipe but healthy. These cookies are gluten-free, naturally sweetened and kid-friendly!

Ingredients for these Almond Butter Cookies:

  • Dates: We use normal dates so we let them 10 minutes in hot water before blending them. But you can use Medjool dates.
  • Oats: If you want to make this recipe Gluten-Free, make sure you use a certified GF oat flour, normally written in the package.
  • Non-dairy milk: Unsweetened almond milk or your favourite non-dairy milk.
  • Almond Butter: We like creamy almond butter but you can use cashew butter or peanut butter!
  • Baking powder
  • Additional ingredients: Vanilla extract, and salt.

In fact, they are perfect for kids because they can enjoy no sugar cookies because they are Naturally Sweetened as always!

How to make these Easy Date Sweetened Cookies:

  1. Preheat the oven to 180°C.
  2. In a small bowl add the dates with hot water for 10 minutes. In the meantime, blend the oats in a food processor and set them aside.
  3. Mix wet ingredients: Add dates, non-dairy milk, almond butter, salt, and vanilla extract into a food processor or blender and blend until smooth.
  4. Make the dough: Add the oats and baking powder to the food processor and blend.
  5. Form the cookies: Make 1 Tablespoon-sized balls and roll them. Place the balls on a baking tray with baking paper or silicone paper. Flatten them with your fingers or with the back of the fork.
  6. Bake them for 15 minutes at 180°C.

Enjoy them with melted chocolate and chopped pistachios or flaky sea salt!

5 wholesome-ingredient Easy Date Sweetened Cookies. Chewy and soft.

Ingredients

  • 2/3 cup dates (120 g)
  • 1/3 cup almond butter (65 g)
  • 3 Tbsp non-dairy milk (we used almond milk) (45 g)
  • 2/3 cup oats (80 g)
  • 1 tsp vanilla extract, optional
  • 1 tsp baking powder
  • 1/2 tsp salt, optional

Instructions

  1. Preheat the oven to 180°C.
  2. In a small bowl add the dates with hot water for 10 minutes. Then strain them. In the meantime, blend the oats in a food processor and set them aside.
  3. Mix wet ingredients: Add dates, non-dairy milk (we used almond milk), almond butter, salt, and vanilla extract into a food processor or blender and blend until smooth.
  4. Make the dough: Add the blended oats and baking powder to the food processor and blend until a dough. If needed, scrape down the sides of the food processor.
  5. Form the cookies: Make 1 Tablespoon-sized balls and roll them. Place the balls on a baking tray with baking paper or silicone paper. Flatten them with your fingers or with the back of the fork.
  6. Bake them for 15 minutes at 180°C.
  7. Recommendation: Let rest 5 minutes and then add melted chocolate and chopped pistachios.
