Simple but sweet Vegan Cinnamon Gnocchi with wholesome ingredients. These dessert cinnamon gnocchi are naturally sweetened with dates. The quickest and easiest healthy dessert, enjoyable with vegan ice cream or plant-based yogurt.
Wholesome Ingredients for these Dessert Cinnamon Gnocchi:
- Dates: We use normal dates so we let them 10 minutes in hot water before blending them. But you can use Medjool dates.
- Gnocchi o gnocchetti: Regular potato gnocchi or gnocchetti (small gnocchi), you can also use home made ones.
- Ceylan Cinnamon: High quality cinnamon for extra sweetness and flavor.
- Coconut Oil: Or vegan butter for the crispiness of the gnocchi.
- Additional ingredients for serving: Plant-based yogurt, vegan vanilla ice cream, vegan whipped cream.
In fact, they are perfect for kids because they can enjoy no sugar sweet gnocchi because they are Naturally Sweetened as always!
How to make these Vegan Cinnamon Gnocchi:
- Soak dates in hot water for 10 minutes.
- Make the Date Cinnamon Caramel: Place soaked dates into a small blender and add water, cinnamon, and sea salt.
- Blend until smooth caramel texture, if you need, add an extra tablespoon of water.
- Cook the gnocchi: Bring a pot of water to a boil. Cook the gnocchi in boiling water following the package instructions or until the gnocchi start to float.
- Brown the gnocchi: Set a sauté pan over medium heat and add the coconut oil. Use a slotted spoon to scoop out gnocchi from boiling water and shake to get rid of excess water. Place gnocchi into the hot sauté pan. Ensure each piece is touching the pan and brown on one side for 4 to 5 minutes.
- Mix everything together: Add the date cinnamon caramel and toss to coat the gnocchi. Spread gnocchi into an even layer and cook another 1 to 2 minutes. Turn off the heat and let the gnocchi rest for 1 more minute.
- Serving: Serve small portions of gnocchi with plant-based yogurt, vegan whipped cream or vegan vanilla ice cream with a little sprinkle of cinnamon as garnish.
