Peach Baked Oatmeal | Vegan & Naturally Sweetened

These Vegan Peach Baked Oatmeal sweetened with Cinnamon Date Caramel is easy to make, made with just wholesome ingredients. This recipe is the perfect make-ahead breakfast to prep on the weekends. Enjoy it for the week, up to 4 days with fruit, yogurt, or a splash of non-dairy milk!

Ingredients for this Peach Baked Oatmeal:

  • Oats: If you want to make this recipe Gluten-Free, make sure you use a certified GF oat flour, normally written in the package.
  • Non-dairy milk: Unsweetened fortified soy milk or your favourite non-dairy milk.
  • Fresh Peaches: Juicy, sweet late summer peaches, the perfect natural sweetener!
  • Flax seeds: Ground flax seeds, Omega-3 plus.
  • Baking powder, Cinnamon, Vanilla Extract and Salt

How to make this Baked Oatmeal with Peaches and Cinnamon Date Caramel:

  1. Preheat the oven to 180°C.
  2. In a large casserole dish add the oats.
  3. Then add flax seeds and cinnamon
  4. Add baking powder, vanilla extract, and salt. Combine the ingredients.
  5. Add non-dairy milk and stir to combine. You can add your favorite sweetener. We keep it free because then we add the Cinnamon Date Caramel on top.
  6. Press down to make sure oats are soaked.
  7. Cut the peaches into cubes and add them to the dish.
  8. Bake for 40-45 minutes, until lightly golden brown. Let cool for 5 minutes.
  9. Serve with some more sliced peaches and pecans and add the Cinnamon Date Caramel.

Vegan Peach Baked Oatmeal naturally sweetened with Cinnamon Date Caramel. Easy to make, with just wholesome ingredients.

Ingredients

  • 2 1/4 cup oats (225 g)
  • 2 peaches
  • 2 cup non-dairy milk (we use soy milk) (570 g)
  • 1 Tbsp flaxseeds (7 g)
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Serving

  1. Preheat the oven to 180°C.
  2. In a large casserole dish add the oats, flax seeds, cinnamon, baking powder, vanilla extract, and salt. Combine the ingredients.
  3. Add non-dairy milk and stir to combine. You can add your favorite sweetener. We keep it free because then we add the Cinnamon Date Caramel on top.
  4. Cut the peaches into cubes and add them to the dish.
  5. Press down to make sure oats are soaked.
