Simple and Delicious but also NATURALLY SWEETENED Apple and Lemony Cake
Ingredients
Wet ingredients
- 1 1/4 cup unsweetenedĀ soy milk (300ml)Ā
- 2 medium apples (200g)
- 80g Extra Virgin Olive Oil
- 1/2 cup Date Paste
- 1tbsp ground flax seeds
- Zest of 1 lemon
- 1/4 tsp apple cider vinegar
Dry ingredients
- 250g whole spelt flour
- 50g cornstarch
- 1/2 cup ground almond (50g)Ā
- 1 tsp cinnamon
- 1 tsp of baking powder
- 1/2 tsp baking soda
- Pinch of salt
Instructions
- Preheat the oven to 200ºC.
- Cook apples in the oven at 180ºC until soft or peel and cut the apples and cook them in the microwave for about 5 minutes until soft.
- Blend wet ingredients: cooked apples, oil, Date Paste (or 100g of dates), vinegar, milk, lemon zest and flax seeds.
- Mix dry ingredients.
- Mix all the ingredients.
- Transfer the batter to a greased baking loaf pan. Then, add a sliced apple to the top of the mixture to decorate the cake.
- Bake it for 45 minutes at 180°C.
