Mushroom Walnut Paté | Vegan
This meaty and nutty savory paté is all you will need to spread in toasts, sandwiches and bruschettas. It is EASY to make with simple ingredients: mushrooms, onion, garlic, walnuts...
Ingredients
- 350g mushrooms
- 1 medium red onion
- 2 cloves garlic
- 1 tbsp EVOO (Extra Virgin Olive Oil)
- Salt and pepper to taste
- 1 tsp mix herbs
- 1/2 tsp paprika
- 2/3 cup walnuts (63g)
- 1 tbsp tahini
Instructions
- Heat the oil in a large non-stick skillet over medium heat. Meanwhile chop the onion, garlic and mushrooms.
- Once hot, add the onions and garlic, and cook until onions start to brown. Next, add the mushrooms and cook for another 5-7 minutes until the water from the mushrooms evaporates.
- Add salt and pepper to taste, paprika and mix herbs.
- In a food processor blend the tahini with the walnuts and 2/3 part of the cooked mushroom mixture until smooth. Finally, add the 1/3 part of the mixture and stir so we have little mushroom chunks in the spread.
- Transfer the paté mixture to two small jars or one medium jar and refrigerate it. Spread will keep for up to 4 days in the refrigerator.
Notes
TIP: Enjoy it in sandwiches with lettuce, tomato and a slice of tofu. It is also delicious eaten with toasted bread. Or eat it with healthy French Fries.
