Mushroom Walnut Paté | Vegan

This meaty and nutty savory patĂ© is all you will need to spread in toasts, sandwiches, bruschettas or Healthy French Fries. It is EASY to make with simple ingredients: mushrooms, onion, garlic, walnuts…The base of it is sautĂ©ed mushrooms and red onion. Thanks to walnuts and tahini we obtain a perfect texture and a plus in nutrition value: Omega-3 fatty acids, calcium, iron and protein.

Mushroom Walnut Paté | Vegan

This meaty and nutty savory paté is all you will need to spread in toasts, sandwiches and bruschettas. It is EASY to make with simple ingredients: mushrooms, onion, garlic, walnuts...

Ingredients

  • 350g mushrooms
  • 1 medium red onion
  • 2 cloves garlic
  • 1 tbsp EVOO (Extra Virgin Olive Oil)
  • Salt and pepper to taste
  • 1 tsp mix herbs
  • 1/2 tsp paprika
  • 2/3 cup walnuts (63g)
  • 1 tbsp tahini

Instructions

  1. Heat the oil in a large non-stick skillet over medium heat. Meanwhile chop the onion, garlic and mushrooms.
  2. Once hot, add the onions and garlic, and cook until onions start to brown. Next, add the mushrooms and cook for another 5-7 minutes until the water from the mushrooms evaporates.
  3. Add salt and pepper to taste, paprika and mix herbs.
  4. In a food processor blend the tahini with the walnuts and 2/3 part of the cooked mushroom mixture until smooth. Finally, add the 1/3 part of the mixture and stir so we have little mushroom chunks in the spread.
  5. Transfer the paté mixture to two small jars or one medium jar and refrigerate it. Spread will keep for up to 4 days in the refrigerator.

Notes

TIP: Enjoy it in sandwiches with lettuce, tomato and a slice of tofu. It is also delicious eaten with toasted bread. Or eat it with healthy French Fries.
