NO SUGAR Blackberry Vegan Muffins
Our favourite Dessert Recipe: It's SIMPLE, QUICK, EASY TO FOLLOW and of course NATURALLY SWEETENED.
Ingredients
Wet ingredients
- 2 bananas
- 2/3 cup Date Paste or 1 cup dates (140g)
- 1 cup vegetable milk
- 3 flax eggs (1 flax egg = 1 tbsp ground flax seeds (7g)+ 3 tbsp water)
- 1/2 cup EVOO (Extra Virgin Olive Oil)
Dry ingredients
- 2 cup whole wheat/spelt flour
- 1 tbsp cinnamon
- 1 tbsp baking powder (16g)
- 1/4 tsp baking soda
- Pinch of salt
- 60g blueberries or blackberries
Instructions
1. Preheat the oven to 200ºC.
2. Mix/Blend wet ingredients: Mashed banana and Date Paste - you can follow our recipe Healthy Sweetener Date Paste, milk, oil and flax eggs)
3. Mix dry ingredients.
4. Mix wet and dry ingredients.
5. Add blackberries to the butter.
6. Transfer the batter to a greased muffin pan and bake it 180°C for 25 minutes.
