This Lemony Granola with Poppy Seeds is the perfect Spring granola, made healthy and wholesome: no sugar-syrup and oils, aka with only real foods. Very easy to make and satisfying. This granola is perfect to have with fresh plant-based yogurt and seasonal fruit, as a snack or with fresh or hot vegetable milk.
Ingredients for this Lemony with Poppy Seeds Granola Recipe:
- Wholesome ingredients: Oats and oat flour, almonds and walnuts, poppy seeds, and tahini.
- Naturally Sweetened: Applesauce or cooked apple, Date Paste or dates, white mulberries, lemon zest, and cinnamon.
How to make this Spring Lemony Granola:

- Preheat the oven to 170ºC.
- Blend wet ingredients: Applesauce or cooked apple, tahini, and hydrated dates until smooth.
- Chop walnuts and almonds with a sharp knife and then in a large bowl mix all the dry ingredients: oat, oat flour, chopped walnuts and almonds, white mulberries, lemon zest, cinnamon, and salt.
- Add the wet blend to the bowl and mix with your hands.
- Put all the granola chunks in a baking tray with baking paper or silicone paper.
- Bake at 170ºC for 40 min flipping the granola in half time and until crispy and golden brown.
- Let cool and then keep it in an airtight container, we use glass airtight jars.
- Enjoy with fresh plant-based milk or yogurt with some seasonal fruit!

Spring Lemony Granola with Poppy Seeds | Vegan & Naturally Sweetened
Vegan Lemony Granola with Poppy Seeds, the perfect Spring breakfast. Naturally Sweetened and wholesome (sweetened with fruit and no oils)
Ingredients
Wet ingredients
- 1/2 cup applesauce (1 big apple, 230 g)
- 3/4 cup of dates (120 g)
- 3 Tbsp tahini (45 g)
- 4 Tbsp water (60 g)
- 1 tsp vanilla extract
Dry ingredients
- 3 cup oats (300 g)
- 1/2 cup oat flour (100 g)
- 1/2 cup walnuts (50 g)
- 1/2 cup almonds (60 g)
- 1/2 cup white mulberries (40 g)
- ¼ cup poppy seeds (30 g)
- 1 lemon zest (6 g)
- ½ tsp cinnamon
- Pinch of salt

Notes
If you want to make this recipe nut free replace almonds and walnuts with sunflower and pumpkin seeds or peanuts.
If you want to make this recipe Gluten Free, make sure you use a certified GF oats and oat flour, normally written in the package.
Feel free to change the nuts with the ones of your choice, our favourites are cashews, almonds and pistachios.
TIP: Keep in mind the temperature of your oven and remember to turn the granola when half the time passes, you do not want to burn it.
